This winter squash salad made with sweet potatoes, bell pepper, and chickpeas is the perfect meal to enjoy in the fall and winter season!
This healthy vegan recipe only takes a few steps to make and is rich in vitamins and antioxidants to prepare your body for cold days!

It has only been recently that I have been roasting squash. To me, squash has always been correlated to soup and I am kind of sad that I didn’t think of this recipe before.
Now, I just can’t get over this winter squash salad!
The flavors from the squash, sweet potatoes and bell pepper go so well together, the almonds give some crispiness and the cinnamon add a Christmassy taste that I adore!
I’m not going to lie, my favorite thing about this recipe is that the only effort to put in there is in cutting the food, that’s it!

Ingredients
For 2 servings
- 250g chickpeas
- 1 squash
- 2 sweet potatoes
- 1 red bell pepper
- 1 onion
- 2 tbsp olive oil
- 30g almonds
- 1 tsp cinnamon
- 1/2 lemon
- Salt and pepper
Instructions
Step 1
First, preheat oven at 180°C (350°F).
Step 2
Cut the squash, bell pepper, sweet potatoes, onion and almonds in small pieces
Step 3
Place all cut ingredients as well as the chickpeas into a bowl. Add olive oil, cinnamon, salt, and pepper. Mix everything.
Step 4
Put the preparation into a baking dish and bake for about 20-30 minutes or until vegetables are tender.
The amount of time needed for everything to cook will depend on the size of the cut vegetables. The smaller the pieces, the least amount of time will require.
Step 5
Remove from oven when all vegetables are tender. Add the juice of half a lemon and adjust seasoning if needed.
Notes et variations
- I have a preference for butternut squash, but any squash variety will work
- Almonds can be replaced by pistachios
- If you struggle digesting chickpeas, consider removing the skin when rinsing them
- Refrigerated, your winter squash salad will last you up to 4 days
