If you’ve seen my previous recipes, you already know that I am not a chef. I only enjoy cooking when it takes a few ingredients, steps, and ustensils.
So when I see that most desserts and pastry require cooking utensils I never heard of or skills I don’t have, I give up before even trying. Who can relate?
However, when I learned that you can make a chocolate mousse with only 2 ingredients… it quickly became my go-to dessert (and it might soon be yours too!).
In addition to that, it suits any diet since it doesn’t include dairy, eggs, nor gluten! Not you know what to cook when your vegan friend comes over (-;
Before asking yourself what the heck does a chocolate dessert do on a blog that supposedly shares healthy recipes, let me remind you of how nutritious dark chocolate is.
Dark chocolate is rich in antioxidants, flavonols and polyphenols, which neutralize free radicals, responsible for many diseases (cancer, cardiovascular diseases, Alzheimer, diabetes).
Moreover, dark chocolate has anti-inflammatory properties and high amounts of magnesium, which help treat menstrual pain and bloating.
You got it, unless you don’t like chocolate (if that’s even possible), there’s no reason not to try this healthy vegan chocolate mousse.

Ingredients
For 5 servings

1 can chickpeas

180g (6 ounces) dark chocolate

Instructions
Step 1
Start by melting the chocolate with the bain-marie technique, which is the best. You can also melt it in your microwave or in a pan in very low heat.
Step 3
Use an electric whisker to beat the aquafaba until thick and firm.
Step 4
Add the melted chocolate and carefully mix everything with a spatula. The aquafaba will reduce in size, which is normal. Because the chocolate is heavier, it tends to drop to the bottom – make sure you don’t leave it there.
Step 5
Pour the mousse in ramekins and put them in the fridge for at least 3 hours. Serve with fruits (works wonderful with berries, mango, pear, and passion fruit) or whipped cream (make sure it’s plant-based though).
Notes and variations

The recipe can be made with any other type of chocolate but to the detriment of the nutrients of dark chocolate.

If you like your mousse extra sweet, you can include maple or agave syrup into the mixture.
